Pu-erh mainly comes from China's Yunnan province. The tealeaves are picked, rolled, withered in the hot sun, after which they are steamed and pressed into cakes. The steaming process generates some moisture that allows the tea to be compressed (without drying) into cakes. This particular Pu-erh is broken up out of the cakes to make it easier to serve and enjoy. Pu-erh can be stored for years, and the results are an earthy, musty character that sets the tea apart from its younger counterparts. As with wine, it is the aging process that creates a taste sensation for the refined palate. The taste has been described as mellow, however those not accustomed to it might not enjoy the 'old' character.
Its unique flavor is not the only reason Pu-erh tea is known world-wide. For centuries, it has been prized for its purported medicinal benefits.
